Our Halloween special, and the black sheep of the menu: a double anaerobic natural from Yunnan, China, that we picked up from Torch. This is a true CETO dark roast, and boy does the funk still shine through. Expect intense, spooky flavors from this one.
This lot comes from Ximeng, a mountainous county on the Myanmar border. The ripest Catimor cherries ferment for 30 days without oxygen and dry to 35% moisture. They then go through a second sealed fermentation of 20 days before drying down to 10–12%.

Got a Switch? Pour the hot water in first so it cools toward 75°C, add the grounds, mix gently, steep 10 s, then open and continue from the second pour (hit 160 g after taring). The cold bloom tames fermenty notes. On a Deep27: 8 g : 120 g, 6 × 20 ml pours.
