[SW x CETO] Kenya Mara Estate Anaerobic Natural

A collaboration to mark the launch of the long-prophesied CETO 5/5 Funk coffee and who better to do it with than Whoreslaw, the Funk King himself?
This collaboration came about after Nick called his test batch of this roast one of the funkiest coffees he'd ever tasted, and that immediately piqued our interest. Not only because we wanted to fulfill the prophecy of the CETO 5/5, but also because we were work shopping a new approach to how we roast funk at CETO and thought this would be the perfect opportunity to really stress-test it.
The goal of this collaboration on both sides was to essentially tame the ferment through our own approaches to roasting and compare how the results turned out. That's why we have a trademark symbol next to the "Funk: 5/5" rating. We were able to tone this cup down to a point where the ferment really isn't too overpowering at all, and the 5/5 is now more of a remnant of the comedic, platonic ideal we had when we first came into this.

As for our version, in the cup we find a creamy, milk tea-like body that reminds us of boba tea, a bright orange wine-like acidity, and herbs and spices on the finish.
