It's a little funky - but less so than the process may make you think. A great coffee both on pour over and espresso. \u003cbr\u003e\u003cbr\u003eNotes on the Green Mist process from the \u003cspan\u003ePrimitivo team:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThis process, dubbed Green Mist by the Primitivo team, uses two stages of fermentation inside sealed tanks filled with carbon dioxide gas (CO₂), so there’s no oxygen. A special starter liquid full of yeast is added to guide the fermentation. These are natural, wild yeasts identified as native to the farm, with which the Primitivo team creates a supercharged colony to add to the mossto, which is then added to the cherry mass. The first stage lasts 24 hours.\u003c\/p\u003e\n\u003cp\u003eThe yeast helps turn the natural sugars in the coffee cherries into flavor compounds that make the coffee taste fruity and floral. The lack of oxygen keeps the flavors clean and bright, especially with citrus-like acidity (like lemon or orange). The coffee is then pulped and put back into a fermentation tank, oxygen-free.\u003c\/p\u003e\n\u003cp\u003eDuring the longer second stage (the last 72 hours), the coffee’s sugars are broken down even more. Not only because we wanted to fulfill the prophecy of the CETO 5\/5, but also because we were work shopping a new approach to how we roast funk at CETO and thought this would be the perfect opportunity to really stress-test it.\u003c\/p\u003e\n\u003cp\u003eThe goal of this collaboration on both sides was to essentially tame the ferment through our own approaches to roasting and compare how the results turned out. That's why we have a trademark symbol next to the \"Funk: 5\/5\" rating.
